In the South, a Hot Dog is not a Hot Dog without Chili Sauce. In Raleigh, NC, during the 1930s thru the 1960s, there was a hot dog grill by the name of the Palmetto Sandwich Shop, located on South Salisbury Street, that served the best hot dogs in town. The owner had a sister who lived a couple block away that opened a hot dog grill on the street level of her house, and I was told she used the same Chili recipe.The sister built a reputation, in the opinion some, of serving the best hot dogs in town. The Palmetto Sandwich Shop sold to a hot dog grill named Scottie's. I received a copy of the ingredients in the 1990s from an employee of Scotties who made it daily.

For nearly 30 years, I have enjoyed this Chili on hot dogs and hamburgers and on just a hot dog bun as a chili dog, or chili cheese dog with my family, and at family reunions and social gatherings, and now I am offering the Chili sauce to others.

A trick I developed is to make a recipe in bulk to freeze. I spoon portions of it into an ice cube tray and refreeze. When I am ready for a hot dog, I heat and thaw one cube of Chili which is the perfect amount for a hot dog (2 Tbsp). To serve a group, I thaw and heat the desired amount I will need.
